They are awesome. Just say no bun because you have an allergy and they let the whole kitchen know (and they cook it out in the open...no hidden kitchen). I like to make a hamburger salad but one time I did get it to go and put it on a gf bun at home. I'd eat there everyday if it didnt clog my arteries and make me fat but it's one of my favorite quick and easy gf calorie splurges.

I appreciate that they always ask if my lettuce wrapped order is an allergy. Fries are the only thing in the fryer, so no worries about cross contamination.

I’ve gone three times in two months and it’s been great every time. I tell them “allergy warning, I have celiac’s”. I order mine on lettuce (they do a really great job at wrapping the burger in lettuce), with everything on it.
I then inform them that my spouse would like a normal bacon burger on a bun. The staff has always reassured me and I hear them tell each other “allergy!” while cooking. They’ve always put my burger in a different bag marked “***ALLERGY***” and there was a red sticker on the tin foil of my burger.
If you’ve never been to a Five Guys, they have a very limited menu of just burgers (bacon, cheese, or plain) in three sizes, French fries (plain or Cajun), and milkshakes.
The only gluten items on the menu are the buns and malt. The chocolate shakes do not automatically come malted, so there’s never been a worry for me there.
