The only fried food they serve is French fries, so those are gluten free.
You can get a burger with a lettuce wrap instead of bread. If you mention you are celiac, they take proper precautions.

Solid chain with tasty fries that are GF - order the burger with a lettuce wrap. Order at counter fast food chain that is step above other fast burgers in terms of quality.

Dedicated gluten-free fryer (the only ingredients that go into their fryer are potatoes and peanut oil)! Staff is knowledgeable and will make sure to change gloves for your order if asked. Buns are grilled on one side of their grill, and burgers on the other and you can easily have a lettuce wrap or a salad instead of a bun.

Excellent food. Bun-less burgers and fries are safe (dedicated GF fryer). Reliable and delicious. Staff is careful to avoid cross-contamination.

I appreciate that they always ask if my lettuce wrapped order is an allergy. Fries are the only thing in the fryer, so no worries about cross contamination.

I’ve gone three times in two months and it’s been great every time. I tell them “allergy warning, I have celiac’s”. I order mine on lettuce (they do a really great job at wrapping the burger in lettuce), with everything on it.
I then inform them that my spouse would like a normal bacon burger on a bun. The staff has always reassured me and I hear them tell each other “allergy!” while cooking. They’ve always put my burger in a different bag marked “***ALLERGY***” and there was a red sticker on the tin foil of my burger.
If you’ve never been to a Five Guys, they have a very limited menu of just burgers (bacon, cheese, or plain) in three sizes, French fries (plain or Cajun), and milkshakes.
The only gluten items on the menu are the buns and malt. The chocolate shakes do not automatically come malted, so there’s never been a worry for me there.
