Visited with wife who is sensitive celiac. When asked sever about GF, immediately mentioned shared fryer which told us she had some knowledge of the issue. We asked about cross contamination and it sounds like very limited items have gluten such as flour tortilla. Orders Arroz con Pollo and it was delicious and no reaction.

I got sick from eating here. No word back from restaurant about the concerns I raised and it’s now 2 days post visit. The quality has dropped here which is sad. Will not go back. Original review below.
They switched locations recently and they no longer have gluten free items marked on their menu. I asked the server and he didn’t understand what gluten free meant. Asked to speak to someone else and he said the food menu is here and the drink menu is here. So I cannot say with certainty this place is safe for gluten free people anymore. I submitted a form to chat with them more on this and will update this listing.
I don’t always expect the waiter to know what gluten free is but I do expect that they would check with someone (a manager or the chef at least) to see what can be done to accommodate GF.

Almost anything can be made GF so don't let the lack of initial menu options deter you. Dedicated fryer. Server was knowledgeable and helpful. Food was tasty.

Was downtown raleigh this morning and needed GF brunch. Fiction kitchen had 1+hour wait which now I'm glad of because the chicharon and waffles(their answer to chicken and waffles) at Jose and sons was great. Waffles made from corn masa and surprisingly fluffy.
UPDATE: Do not go on a busy night. Food is flying everywhere and there can be cross contamination. Found a macaroni noodle in my GF entree.
The food is great but DO NOT eat fried items. They do not have a dedicated fryer and list fried foods as gluten free.
Most servers will tell you this and the chef can accommodate celiacs. Update: Found a stray macaroni noodle in my supposed GF meal. Manager comped but avoid on busy nights!!!!!!!

Great food! I love to go to a place that has the gluten free items marked on the menu, so at least I know know where to start. The service and the food were fantastic. My server was knowledgable and able to guide me to the best choice.

The atmosphere is great and the menu is clearly labeled BUT the guac is marked gluten-free and unless you like spoonfuls of guac sans chips, it's not gluten-free (the chips are in a shared frier and therefore not safe for Celiacs). Our waiter didn't know any of this and couldn't tell me how the chips or food were prepared and only bothered to find out after my friend asked him point blank to go check. That said, the food that IS safe is delicious. Chicharrones and waffles are very strange but delicious - and definitely enough for two meals!
Great restaurant with plenty of gluten-free options. I got the chicharron and waffles and it was one of the best things I have ever eaten! Highly recommend this place. It's a fusion of Mexican and southern cuisine so there is something for everyone!
Delicious and lots of GF options marked on the menu. I had the flautas for an appetizer and the Chicharron and Waffles (Crisp pork belly “cracklins,” corn masa waffles, poached egg, and agave-sriracha sauce) both were exceptional!
