They have gluten free bread but you need to remind them if you have Celiac. The person making mine put the bread down on the same counter they use to make regular sandwiches. I asked for new bread and he put down sandwich paper for the new one. No reaction after.

I went here before a flight and saw reviews about them never having gf bread so I decided to ask if they had it and could do an allergy. The man behind the counter said yes and yes and as he made my sandwich I watched his every move. He was very good at making sure nothing was cross contaminated and even used a plastic knife to cut it in half. I got the Embarcadero which was great. The bread they used was Udis.

Just ate here, very good GF Bread. Server was very friendly and helpful when helping me decide on which sandwich. Plus they had GF brownies!!!
The GF sandwiches are great, but this place is hit or miss. In my experience, at least half the time they don't have GF bread. They aren't committed to GF, so I cannot rely on them for getting a needed meal during travel.
You need to ask before waiting in the long line but it's difficult to get someone to go to the back room to check.
SFO gate 62 - GF bread on any sandwich. GF bread is kept bagged, not stacked with other bread. Salami and Swiss was a good sized sandwich! Up charge for GF (pretty common), fair prices for airport fare. Very friendly staff!

Meat and cheese were good but the gf bread was underdone and not worth the price. I recommend not paying for bread at all. Unless you're desperate don't eat here. $40 for the sandwiches, two of which were meat and cheese only. Overpriced and underwhelming 😞
TERMINAL 3, by gate 83. Sooooo nice to be able to have a sandwich for my 6+ hours on the plane during dinner/lunch. I was worried about subsisting only on snacks.
They do not always have GF bread, but I lucked out. He changed his gloves to make my sandwich. I skipped the toaster and took a risk with the mayo bc my celiac is not super sensitive; there are mayo packets at the end of the line tho. He pulled the toppings from the regular containers along the line which I was ok with and didn’t ask about cleaner items in the back. So contamination could be an issue for those who are super sensitive. And I skipped having him cut my sandwich (a plastic knife did the job just fine).
They even had GF marshmallow treats individually packaged 😊.
I walked all around gate 72 and i did not see this store, there is an empty space, i assumed they have closes this location, bit found it by gate 82, it didn't look like it would be safe so i decided on not trying this
They have gluten free bread for the sandwiches, but it has to go through the same toaster as the regular bread (and they might forget to use a clean knife to cut the sandwich), so it’s not safe for celiac. Looks like it’s a new process for them because they didn’t know much about cross contamination other than changing gloves and putting paper down on the prep station. But the availability of GF bread is a good start and it tastes great if you’re not sensitive to CC.
