Celiac. I have eaten here a few times. Food is very flavorful and different from the usual Mex. I have not had an issue and they seem to be aware of the gluten issues.

From an email from the owner when I contacted her:
At Sazón we pride ourselves on our numerous gluten free options. Any fried foods labeled as GF (including the tostada chips) are prepared in a separate fryer. Additionally, prep work on other GF items occurs separately from items prepared with gluten. The primary items containing gluten are some of the desserts and the flour tortillas which are provided by a local vendor.

We’ve started coming here every Tuesday for lunch - the shrimp tacos are the bomb! Grilled veggie ones are also yummy. We keep having the same waiter - our first visit I told him I have celiac, and he said he’d take care of me. Nice, but I always like it when they’re more detailed/communicative. I do feel better since I went in armed with the info from the owner. I don’t know if he marks my order as GF since he’s familiar with me? But no one orders anything with gluten with us - and there’s so few things on the menu that have gluten I’m not too worried? Just not rock solid yet.
That being said, they have so many things on the menu I want to try. Chips & salsa are awesome. So far so good!

The food was delicious enough to wish we didn’t live in Florida. We had the chicken enchiladas and the poblano rellenos. I wasn’t expecting the poblano to be fried. When I asked about it, they knew exactly what I was concerned about and assured me it was a separate fryer and even separate prep space entirely. No cross contamination. Service was quick and courteous.

Great service and delicious food! We even had leftovers to take home with us! Must try the vampiro taco, which is my new favorite. The menu is clearly marked for gluten free, and the servers are knowledgeable.

The food is wonderful. I got the steak fijatas and guacamole. The guacamole is made table side. For all GF dishes they will prep separately everything is marked in the menu. The fryer is not GF. But they have corn tortilla for the table side guacamole that are delicious. Very informative staff. They are great.

The most phenomenally delicious food, I’d say 85+% GF or GFO.

Incredible food, with much of the menu being gluten-free. Best Mexican food I’ve had in the Denver area.

Had a really bad experience at this place. I ordered fajitas with corn tortillas and they assured me everything would be prepared on a separate grill and mentioned they have several repeat customers with celiac and they understand the severity. When my food came out, I the tortillas looked like flour tortillas. The waiter told me he was 100% sure that they were corn (and didn’t check with the kitchen). I asked another waitress who walked by and if she could tell what kind of tortillas they were and she said they were definitely flour and she would have the meal remade. I ended up eating there and I felt fine but it was pretty disappointing that the wait staff spoke with such confidence and were wrong. I do think they have a separate prep area but the staff are not well trained. This place is new so maybe I’d give it another try but I’d definitely wait till they have things more figured out. Food was good but not great.

This is the place you should go today! Incredible menu with most items being naturally GF and the few items that have flour tortillas can be made GF with the corn tortilla. They used a clean pan to warm corn tortillas and the line all changed gloves when preparing my plate as the waitress ensured everyone knew I had Celiac. We loved all of our meals and cannot wait to go back and try everything else! You will not be disappointed!!
