Excellent! We wound up being the first customers of the day so I can speak to cross contamination risk, but it seems like they know what they're doing. I had the new classic risotto and it was very good. It's nice to have so many options.

Celiac friendly?

Yes

GF Focacia is cooked in the same oven so I didn’t try it. Was concerned about the sauces and cross-contamination so I didn’t try the pasta. Salad with chicken was fine.

Great place for build-your-own including GF penne or fettuccine pasta and GF focaccia (flat-bread/pizza).

I had Penne Pasta, with sausage, mushrooms, garlic with red sauce. They cook the noodles separately and then mix your entree. Let them know you have celiac/allergy. They will change Gloves.

They are very cautious and have a wide variety of gluten free options. Would love to see them come to Colorado!

Ordered gluten free fettuccine with the pesto sauce, and any 6 toppings available. It was delicious!

Gluten free pasta made in a new pan with new tongs. All sauces, toppings and protien(except meatballs) are gf, and they also have risotto as well!

Super helpful, for 7 year old, flat bread prepared on separate tray. She enjoyed it very much, highly recommend.

Spoleto has delicious gluten free pasta and flatbreads. It’s a build your own experience, and the staff swaps gloves and uses separate clean pans. Everything is made to order while you watch! Basically all the toppings except the giant meatball are gluten free, as are all of the sauces. I have eaten there 3-4 times in the past six weeks that I have lived nearby, and have been happy every time!
