The server was 100% on point! He understood the concerns of a celiac and stated they wipe down the surfaces and change gloves etc….I felt comfortable and therefore ordered.

The atmosphere is great and you can watch them make and cook your pizza. They prepared a GF crust from a separate prep space and put it in a clean baking sheet. The gentleman who prepared the dough walked it to the line and handled everything himself, he understood and was doing what he needed to; unfortunately when he was on the line preparing to pizza another cook took regular dough from the container, sprinkled flour on the dough and started tossing it. He was basically tossing the dough with flour over the top of the area where my GF crust was being prepared.

Celiacs and those with allergies should be cautious. There obviously was no protocol in place and the line should have stood by for two minutes while the precautionary measures were taking place.

They did refund the meal and I left.

** I understand that those with allergies are a small percentage of the clientele of a business, if you are going to advertise please train the staff and the line to just hold tight for a minute so others may enjoy the dining experience.
