I had a very different experience than the previous reviewer. I went apparently only a few days later and talked to I think the owner. He had absolutely no idea what gluten was (at one point he asked me if cheese was GF and at another point, I’m fairly certain he was checking a barbecue sauce ingredients list for “gluten”), or what on the menu could be made gluten-free. Further, yes, they do have “gluten-free burger patties” (though I’m still confused as to how and why a beef patty would contain gluten) but they didn’t have GF buns when I went — my burger came on GF bread, like a sandwich. Ultimately, I ended up not getting glutened, I think mostly thanks to a diligent chef in the kitchen, but this was by far the most stressful dining experience I’ve had on this trip. If you go, know that the owner and staff are willing to accommodate food allergies, but you may need to ask a lot of questions and provide some direction.

This is seriously the best burger I’ve ever eaten. Gluten free buns, gluten free burger patties, and gluten free fries (regular and sweet potato). I’m still in shock over how good this burger was. The menu at the table doesn’t have gluten free bun listed but the waiter was very knowledgeable. We’ve eaten at a lot of places in Zermatt and I would consider this a “must-go” for any celiacs traveling in.
