Waiter was very upfront about celiac limitations (not a fully GF kitchen nor a dedicated GF space in the kitchen). Pastas are out since same water is used, but risottos are fine as are veggies, meats, etc. Many GF options and extensive beverage list. Quality of food is outstanding.

NOT CELIAC FRIENDLY. I can’t find where to change that on this review. I went here for my birthday cause it was listed as gluten free here. It is not celiac friendly really at all. I was told all pasta is made in the same water so I couldn’t eat that (3/4 of the menu). The only things I could have were plates of veggies with EVOO or the meat, but it’s Italian so I went for pasta. Disappointed, but glad the staff was knowledgeable enough to tell me and didn’t just let me eat it anyways.

Acquolina was my favorite Italian restaurant before going gluten free, and it still is even with my gluten allergy. The waiters are all very knowledgable about what is and isn't gluten free and if they aren't sure, they will double check. The pizza is made with an almond flour that is decent for pizza crust, not the best, however the GF pasta is what really makes this place a paradise for allergies. They also provide a gluten free focaccia bread along with a delicious selection of risotto and salad. This place is a MUST STOP for all visitors to Aspen, especially the gluten intolerant.
