This is not coeliac friendly. The konjac option makes the noodles GF, but as of yesterday (18.01.2024) all the ramen has soy sauce in them - this may change on the future. The vegan one still has soy sauce, it’s just the one with the least soy sauce. I don’t know about the cooking water. The service was exceptional, and everyone loved their meals.

I ate here and had exactly what the last reviewer did (Konjac noodles with shio broth and pork). Shio is a salt based broth without soy sauce and konjac noodles are made from a plant. No clue exactly how safe this is (I.e. do the noodles share cooking water etc) but I get sick pretty easily and had no problem afterwards. The trickiest thing is finding it as it is in the basement of the Shinjuku station which is both massive and confusing. It is in the Lumine area and on floor B2F. There are other branches throughout the city as well. Very delicious and classic ramen!

They have konjac noodles which are gluten free. Just choose one of the shio options like the yuzu shio ramen which is delicious!!!!
