I talked to the waiter and apparently what they do is that they don't only use rice flour, but a small amount of wheat flour as well (do give the bread better properties). Not sure what amout of gluten that actually is, but decided not to risk it.
They however did have one pastry which was completely gluten free, so I decided to have it and it was delicious :)

Best bakery ever, everything is made with rice flour. The staff was very nice and helpful and gave us extra food when they heard about our other experiences in Seoul. Their bread was very good and soft. Everything is gluten free.
