Spoke with one of the very knowledgeable pasta chefs who explained the lengthy 2 hour process of creating gluten free fettuccine. All pasta appears to be separated and kept within it's own covered container. They are very flexible and accommodating. Their inclusion of a gluten free option makes every menu item accessible. The gf white cheddar jalapeño entree was phenomenal!
