Knowledgeable staff that is very reassuring. They mentioned that they're specifically trained about gluten-free requirements and have a "celiac” button to alert the kitchen in their system. There is a dedicated gluten-free frier, but not a dedicated gluten-free kitchen area. I had no issues after eating here and would come again.
