I mistakenly ordered off the main menu thinking everything was gluten free, but it's not. There is a small portion of the menu that is gluten free and the mistake was completely mine. However the the part of the cinnamon roll I ate was good.

Kim is amazing! I have celiac disease and have never gotten ill. We are the costumers in front of you order 2 to 3 large boxes of goodies. Sorry, not sorry! My gluten eating friends order gluten free cinns, so if that doesn’t tell you something I’m not sure what will! Everything is great- the bacon cheddar scones, the cookies and whatever recent flavor they experienced with - we get it all! Thank you for taking care of this small population in Waco Kim. We are grateful for you… please don’t ever stop baking for us glutards. -Tara

Updated hours: M-F 8 am to 5:30 and Saturday 8 to 4. We went on Saturday noon and they had stock of all the GF items. Had the cinnamon roll- great as always!
I was so excited to try this when I heard about it. Just like the other reviews said, I met the owner’s brother & he said they currently do all of their gf baking on Tuesday. I was in town for the weekend so I got a sample box to go. Everything was frozen but I re-heated it & it was still delicious! I tried the crust less quiche, bacon & cheddar scone, blueberry muffin, cinnamon roll, chocolate chip cookie & strawberry cupcake. I have a sweet tooth & I LOVED the cinnamon roll & the cupcake! I will definitely place a special order of the cinnamon rolls in bulk next time I am in town!

Baked Bliss Bakery was on our list to try on a day trip to Waco. We called ahead and were notified that while they have gluten free pastries, they also bake pastries with gluten. They set aside 2 days to bake gluten free items after carefully cleaning counters and ovens. They have dedicated bowls, utensils and pans. They assured us that they take every precaution and have a lot of customers that have Celiac or gluten intolerance/sensitivity. The bakery is located across the street from a cute elementary school in a historic building with a cute deck and trailer where the sell the baked goods. We tried an assortment of short bread, lemon and pecan, scones, fresh strawberry, orange cranberry, and bacon cheddar. We also tried the “Cinnies”, delicious cinnamon buns. One of the owners was there, overseeing deliveries. He went out of his way to talk to us. the young lady that served us was very knowledgeable and friendly! It was clear that they loved what they were doing, were dedicated to providing tasty and gluten free pastries, the historical building and the neighborhood! I have celiac disease and I am highly reactive to gluten. I went home with an assortment of baked goodies and did not get sick at all! We will be back just to buy more gluten free pastries! Worth the trip from DFW. My husband and son are not celiac but they loved everything! They could not tell that the pastries were gluten free!

I enjoyed the GF options. The cinnamon roll was DELICIOUS…but was served cold so I got it to go and heated it at home. Best gf cinny I’ve ever had! The bacon+cheddar scone was to die for.
The gf bake day is Tuesday, so in order to have the most choices…I wouldn’t wait until the weekend.
Owner was very friendly + chatty, outdoor seating only.

The bacon and cheese breakfast Sammie is incredible. A fluffy biscuit texture. The cinnamon roll is great as well. I’d say more of a cake than bread texture, but wonderful flavor and texture and not at all dry. Will be back! Highly recommend!!

We just tried for the first time today. I had a gluten and dairy free lemon cupcake and it was so amazing. It was awesome how the cupcake stayed together- when I try to make gluten and dairy free cupcakes at home they tend to crumble.

The GF cinnamon roll was the best that I have ever had. They go above and beyond to ensure our safety. There is one day a week that they bake only gluten free items to prevent cross contamination. In my experience it was friendly but not fast.

I stopped here a few months ago and grabbed my first cinnamon roll in 6 years. It was absolutely amazing. The dough was flaky like any other cinnamon roll, and the perfect amount of frosting.

Gluten/dairy free cupcakes were out-of-this-world delicious! Dense moist cake and thick, creamy frosting, just heaven! Owner was super sweet and answered our text questions immediately. My very gluten/dairy sensitive son and husband had no reactions. Highly recommend! Be sure and call or text to see what items are available before you go.
Despite my experience below, the GF cinnamon rolls were divine.
Well...I was so excited to find a bakery that offers GF items. (I couldn’t stop thinking about GF cinnamon rolls after reading one of the reviews.). I explained that I’m way allergic to wheat and have to carry an Epi-pen for that allergy because my reactions are so strong. The girl at the counter started gathering my order and in the mean time, THANKFULLY, the owner came out and started chatting. The girl handed me my order and the owner decided to look inside the boxes. Every item I was given was the full on GLUTEN version. Grrrr. So scary. The owner did go and gather my order herself even though I know she’s busy. So thankful she decided to check but, C’MON MAN...I’m hoping this was a learning experience for the girl at the counter and I’m singing praises that I didn’t go down. Not sure how the food is what I was given was frozen. I will let you know.
Amazing gluten free cinnamon rolls!!!
The owner is very knowledgeable about Gluten Free and takes the time to prepare her gluten-free items at specific times when she shuts down baking regular items. The staff is friendly and her scones are amazing!!
Yes
Not celiac-friendly because they bake wheat items too but had the best gf cinnamon roll today! They also had cookies, brownies, and a couple scone flavors. They bake fresh gf bread on Wednesdays. I highly recommend them for flavor and texture of their gf baked goods.
