I agree with Sarah's review. This bread is amazing, and is the only wheat bread I've been able to digest in decades. It's also the most satisfyingly delicious bread I've ever had in my life! My only caution is, it's so good it's hard for me not to eat the entire loaf in one sitting. Pace yourself!
Don is the owner and baker of Barrio Bread located in the Broadway Village, and what he does to the chemistry of the dough is pure magic! He has developed a working strategy, albeit through many years of training and discovery with some of the best bakers around, Don has mastered the art of changing the chemistry of the gluten protein compound, to another which makes the bread digestible for those who have a gluten intolerance. I'm not quite sure if this is completely Celiac friendly but I would advise you to call the bakery and ask if you have Celiac disease. Besides that.... Barrio Bakery is a heaven sent to all who want certified organic by the USDA bread products, and for all those that are Celiac and gluten intolerance people.
