Update: I was at the state fair with the plan to eat here since it's the only celiac friendly place available and they refused to make a melt sandwich without the toppings on it. I even asked if they could just put the toppings on the side and they said "no our boss is very strict and we can not do any substitutions". Apparently leaving topping off is considered a substitution. I am allergic to onions and garlic so I only wanted the melted cheese and no smoked salmon or reindeer sausage or veggies......all I felt safe eating was the bread and melted cheese. They Absolutely refused to leave off any of the other toppings! You would think they would gladly take my $10 and make just a cheese melt and keep the rest of their ingredients but I guess they would rather loose business than leave a few toppings off........?! You would think they would understand food allergies like onion and garlic and understand why I would not be able to eat the sandwich with the toppings but apparently not.

I REALLY wanted to have an awesome experience here but unfortunately it did not happen. I ordered a small slow roasted meat sandwich with beet chips. The small sandwich was so tiny it actually fit into the palm of my hand (it was not a normal piece of bread, it was a perfect circle like it had been cut out using a biscuit cutter. There was probably about 1 Tablespoon worth of meat on it and one little sliver of spiced apple. The flavor was amazing, but it literally took me 3 bites to eat the whole thing! The beet chips were the red triangle corn tortilla chips you can get from costco and there was only about a hand full at the most. I was expecting sliced beets that were either baked or fried....not red corn chips. I am not picky and I was really looking forward to having a gluten free place to eat in Wasilla, but the whole sandwich/"beet chip experience was strange and I expected something totally different. I will say the flavor of the sandwich was awesome....but seriously the size was so sad and definitely NOT worth over $7! I tried to go back one other time to give it a 2nd chance, got there 30 minutes before closing only to find out the kitchen was already closed. Unfortunately I don't think I will go back for a 3rd try.

Update; I did give them a third try and regretted it. The owner was incredibly rude.
