I chose the most simple menu item with as few ingredients as possible- panini with gf bread, ham, Swiss, Dijon mustard. They said the would pull the meat and cheese from a container that had not been previously accessed by gloves or utensils that had been in contact with gluten. They also put my sandwich in foil inside the panini press to prevent cross contact. Very nice people. Their gf bread was from Aldi - live g free white bread. One important thing to be aware of is that they serve sandwiches on wooden boards (thus the name boardable) which can be unsafe for celiacs. Request a plate or piece of parchment between your food and the board.
