They have performed magic with gf ingredients, and make a puff pastry do things that I have never seen a gluten free dough do. The creme puff has crispy distinct layers, and delicious filling. It even comes in a chocolate version. I will think about that thing for a long time after I am back home. As a home baker, I feel like Salieri at the end of Amadeus realizing he will never compare. How did they do it? I don't know, but it's still amazing to behold.
