My waiter was new and extremely attentive to my gluten sensitivity. He let me put in a back-up order option and consulted with me about alternative proteins besides the pork belly (their pork is marinated in a gluten-containing soy sauce). Everything prepared with their soy sauce and their fryer is cross-contaminated, but there were still plenty of options.
They were very knowledgeable and able to use rice noodles in place of any ramen dish. They also have gluten free soy sauce to cook with and for the table. They let me know that their oil is cross contaminated, and led me through the menu on what to order and what is safe for Celiac be Gluten Free.
