We stayed at the Four Seasons and ate often at the Braidwood Tavern-- every day for breakfast/brunch and once for dinner. Overall, the restaurant is very accommodating for Celiac, but their menu is a little confusing and you do need to be patient when ordering for breakfast (instead of doing the buffet) and you do need to check and re-check when you order and when you receive your order.
My sister (who has Celiac) was able to safely eat from the breakfast buffet. Gluten ingredients are kept very far from most GF items. When she asked, the servers were able to bring her GF toast and GF pancakes from the kitchen to sub for the toast and pancakes that were on the buffet. My son (who has Celiac and is very sensitive to cross-contamination) did not try the buffet, but instead ordered off the breakfast menu. He enjoyed pancakes multiple mornings, as well as GF bagel and lox. The one caveat is that you have to wait a REALLY long time when ordering off the menu. The kitchen is just slammed in the am and my guess is they're still dealing with some pandemic staffing issues. We learned to place his order almost immediately and sometimes it helped. He also really enjoyed breakfast smoothies and hot cocoa.
We did have to send one order of pancakes back because it had cookie crumbles all over it and once we had to send back the hot cocoa because it came with a cookie on the side. It's just little things like this that make you nervous. So, I 100% recommend the place, but you do need to stay attentive. My son never got sick and we ate here daily.
Note that for dinner, not everything that is GF or can be prepared GF is labeled as such on the menu. For example, crispy brussels sprouts were labeled GF, but fries were not. It turns out the fries are fine and are fried in the same dedicated fryer as the brussels sprouts. Also, the burger is not labeled as that it could be prepared GF, but they definitely have GF buns and my son enjoyed a GF cheeseburger. All in all, the place is great... they just need to up their level of training and menu labeling to match what we experienced at The Fairmont.

Had breakfast and lunch here. Staff aware of cc and celiac , gf required. Had separated prepared breakfast toast in oven and pan prepared ham/ poached or scrambled egg. Lunch prepared steak and fries. All safe and I was advised a dedicated gf fryer. Food was delicious and atmosphere, service great. No side effects.
