I took a class in macaron making from the owner at the Lenexa Public Market. She told me her macaron class is always gluten free, including snacks. The macarons in her shop are all marked GF, and after baking with her, I feel comfortable eating them; however, there is risk of cross contamination. When she makes macarons, she makes 2000 in a day, so it’s her main focus that day. I liked the way she handled ingredients and how clean she kept her kitchen during class. Proceed with caution if you are very sensitive, but they are amazing and there are so many wonderful flavors!
