What a delight to have this right in my hotel! I checked with the staff day before and was assured I would be able to eat a meal safely, that they would work with me not only to keep me safe from gluten, but all my other sensitivities, as well. To make it even better, my server had more food issues than I, so I didn't have to educate and then hope they'd follow through! I relaxed, as I usually don't when eating out. I had salmon, but it was prepared with seasonings I could eat. I don't remember what came with it (it was the beginning of a 10 day trip), but I ate all of it, enjoying that a chef took the effort to make my dish as interesting as those without Celiac Disease and so much more. I'll probably never be in Vancouver again, but I hope those who are will go to the Sheraton Wall Center to dine at Cafe One.
