Excellent food and service. Gluten free items are marked on the menu. The idea is that you choose a base for the meal, like salad, rice / beans, noodles, etc., the add your desired selection on top of that. You can add chicken, fish, vegetarian. The restaurant is in a large, nice old house a couple of blocks north of the main tourist walkway in the centro. I had chicken on a traditional Casado base, and it was excellent with a sweet sauce. They warned me that some of the sauces that they bring to the table, soy, hoisin, etc, contain gluten. However, the fish sauce does not. I would definitely return if I was in the city center.

Cafe Rojo serves Vietnamese food in a charming building just north of the city center. Staff understood about cross-contact, knew what celiac disease is, and explained all the ingredients to me carefully (in English) when I requested. I had the rice noodle bowl with chicken (note the veggie add-ins of mushroom or eggplant are cooked with soy sauce so those options are not safe for celiacs). The ginger lemonade was great and locals told me they have some of the best coffee. Everyone was kind and the atmosphere was very comfortable—romantic garden seating is also available. I felt safe eating here and the food was fresh and high-quality.
