This pizzeria is an authentic wood fired pizzeria. The owner of the shop is super careful and particular for celiacs. What you do need to be aware of is that the store only has one oven and to guarantee your pizza is celiac friendly you need to order early in the evening - preferably before 6pm. The reason for this being that before 6pm the owner of the store will very meticulously clean out the pizza oven and scrub all prep surfaces to ensure the area is free of cross contamination. After 6pm the store is very very busy and the owner cannot provide a celiac guarantee. The owner is extremely helpful and very nice and went the extra mile to ensure our pizzas for my kids were celiac friendly - we placed our order at 5.30pm and the pizza was ready 30 later. When we left the store at 6pm it was crazy busy so I appreciated the owner giving us this piece of advice.
