Dedicated fryer for bone in wings, so it's a gluten free fryer. The breaded boneless wings go to a different fryer. They will put straight cut french fries in the bone in fryer when vou tell them about vour "allergy" celiac. They put breaded sides including boneless wings in the other fryers. The fryers are next to each other but they're separate , there's a metal divider that goes in between them. Never any point in time in which they put breaded food in the bone in fryer. They're extremely careful about keeping the fryers separate. If they have boneless wings, they bring whatever they need to the fryers & they walk with the fry basket, so they don't contaminate with other grease. Designated fry baskets for each one. Green fry basket for bone in, red fry basket goes with breaded items.
