First of all, Charlie's has a dedicated Gluten Free fryer! Second, they have Gluten Free bread to substitute a gluten roll and there is no extra charge! Third, their hot sauce is Gluten Free. And fourth and most importantly, the staff is trained about Gluten allergies. This is good as we Celiacs have been told to use the word allergy in restaurant settings. They seem to be knowledgeable or will ask the cook if they are unsure about whether or not the food is Gluten Free. Cooks and servers change their gloves when dealing with Gluten Free food. I felt very safe and comfortable eating at Charlie's. Good job to Charlie's!
