As the other review said there’s not a huge amount of options in town, but this restaurant does have a couple things available. It’s very Americanized Mexican food but it was okay and I didn’t get sick so if you aren’t too hung up over authenticity this place is a pretty good option. I don’t know if they take dietary restrictions that seriously though so it may have been a fluke that I didn’t get sick, so maybe judge for yourself if you think it’ll be fine. I will say that I asked about the nachos as a previous review said they were fine but the waitress said no so I ended up just getting a salad instead.

Not a lot of celiac options in Terlingua, but we made this one work. We asked some questions about their chips, beans, cheese, etc. was able to have the nachos grande with everything but the beef. Also, the guacamole and salsa is safe. Had no problems. Very friendly family ownership.
