They knew what Celiac was and had a protocol in place to prevent cross contamination.They dedicated a worker to clean his hands, shut down a machine, cleaned it (twice), got clean utensils (washed them again), toppings from the back to ensure no cross contamination, and made the ice cream rolls himself to ensure no errors in the process.
