On safety—We are a 100% Gluten Free company. We only use certified gluten free products and our staff is trained on the subject. Moreover, we have a government-emited permit to function as a gluten free business, meaning that we have to follow strict protocols to ensure no cross-contact could happen.
For example, the staff has to enter the facility through a backdoor directly into a changing room, where they change their clothes to a business-provided, business-cleaned set of clothes, and clean their hands and arms thoroughly to avoid any type of cross-contact. This protocol is followed even when the staff is on their break and go outside.
For added guarantees, the owner is a syntomatic celiac chef diagnosed over 12 years ago that works in the store and supervises everything from the kitchen to the front desk.
