Told by management that nothing other than their sauces contain gluten. This includes katsu sandwiches which use a rice based panko breadcrumb! Told to tell them when ordering you are celiac so they don't cross contaminate the bun on the grill with the regular ones. Fries are safe! Attached Chuck's hop shop has many ciders to choose from. Have eaten there and can confirm no issues.
