Since there's no reviews we wanted to put something out there for coconut bay. We are here and and would say generally there is gluten free food available, but it's poorly communicated. We were optimistic considering the page dedicated to it and questions asked at check in but so far haven't been totally impressed.
The main restaurant is buffet style, and has at most a couple of items labeled gluten free. If you can track down a chef you can talk to them about what's truly gluten free, and a lot generally was. Exception being the Caribbean night on the pool deck, only the vegetables were labeled GF and none of the jerk Caribbean food was. The oxtail was the only GF protein option.
Most of the jerk treehouse is not GF, Exception being the sausage rice and beans.
There are some gluten free options at the restaurants, but the Italian for example has one salmon entree that is gluten free. Restaurant reservations also fill up quickly so we haven't been able to eat at the most GF friendly (veranda) restaurant.
They can make GF pancakes at breakfast but only by request. 10-15 minutes extra.
It was not quite as gf friendly as we expected, but my wife was able to eat something everywhere at least. On our third day and she hasn't gotten sick.
