I don't know if other people with Celiac have this same feeling, but I find it hard to get sushi! Everything has soy sauce somewhere, imitation crab, tempura crumbs, etc., and sometimes you encounter a language barrier that makes describing your allergy difficult. Needless to say, usually a sushi restaurant is stressful and unfulfilling, which has led to me not eating it for several years.Thank goodness Craft Sushi opened up in Springfield! They self-describe themselves as "like Chipotle, but with sushi". You go to order, and tell them all the different ingredients you want in your roll. You can also make a rice bowl topped with the same sushi ingredients. I have been twice now, and they are extremely helpful to those with allergies, and will walk through the safe options with you. Also, if you notify them of your allergy, they will do a full wipe down of the work area and change out gloves. Finally, I can have roll with the ingredients I want and can trust. The quality and flavor is great, and they also make great flavored teas! If you have experienced the same gluten concerns with sushi, you will be happy to find this place!
