Only open weekends and during the Sugar Maple season, so call ahead to make sure they’re open. Very popular with the locals, with a long wait. They have gluten-free waffles and gluten-free pancakes, but they do say that they are cooked on the same equipment as the glutenous variety, so NOT safe for celiacs. We had one of each and found the waffles more flavorful. Yes, the wait can be long, but you can hang out in the downstairs maple boiling room and learn about the process.
