Located inside the Saint George Hotel, the entire hotel including restaurant, pool bar, and breakfast all have chefs and staff with full celiac awareness. They take it seriously, have a different prep and cooking area.
While the Doña Marie menu is marked with GF markings, these are not always up to date, do not rely on them. Instead, inform the waitress/waiter that you have celiac (soy celiaca) and they will communicate with the chef and guide you through choices. Once they know you have celiac you are in very safe hands.
My highly symptomatic 6yo spent three nights at this hotel and we felt safe the whole time, with lots of options for food and assurances from all staff.

steak and mashed potatoes (cholera con puré de papas)
hamburger without bun served with assortment of veggies (tomatoes, avocado, etc)
fresh river fish with mashed potatoes

yuca gnocchi with gorgonzola cream sauce and almonds
ceasar salad (without croutons)
salad with prosciutto, melon, blueberries
chicken fingers (from hotel pool bar)
and more….
the breakfast is a buffet but they will bring a hermetically closed container of homemade breads/breakfast breads, and will happily make some boiled eggs.
