Most of the stuff on the menu, aside from the burritos and quesadillas, is gluten free. I asked and was told that nothing with gluten is fried in the deep fryer— the flour-based burritos/quesadillas are pan fried— which really opens up many options not usually available, such as the deep fried pork.
I had the pescado frito con tostones and it was soooo delicious!!
Though I have celiac, I do not usually have a strong reaction unless there is a lot of contamination, so I cannot entirely vouch for cross-contamination experiences, but it seems great.
