UPDATE:: Sad news. When I was at Dosa Paragon most recently, I noticed that they seemed to have added quite a few gluten-containing menu items. I asked the owner if/how they were managing cross-contamination issues. He eventually admitted that they occasionally cook the chapatis, which are made with wheat flour, on the same grill as the dosas. So for celiacs/people with serious sensitivity issues, it looks like Dosa Paragon isn't a safe option anymore, and the gluten-free symbol next to menu items is misleading.

Incredible South Indian food! I think only the paneer contains gluten, but I’ve had most everything on the menu and haven’t gotten sick. The masala dosa is incredible, and the sauces are fantastic. Great prices too.
