Enchiladas, Tacos with corn tortillas, gordita, chicken, and even nachos were gluten free until the pandemic and new cooks. Some do not speak English which could be a risk, but if you talk to someone else it could make it safer. Once got flour not corn which was replaced. Last gordita for sure had gluten, so do not say it is always safe -- sorry!
