I have eaten at El Papagayos restaurant for over 10 years and have never been glutened.
I am celiac and very sensitive. Many if not most items, can be modified for celiacs, with corn tortillas instead of wheat tortillas, or plated with warmed corn tortillas to the side.
The food is very healthy, of homemade Guadalajaran cuisine. A robust dairyfree or vegan menu fills the first menu page. There is a breakfast menu. And the food is authentic and hearty. El Papagajo (the Parrot) is a local ‘find, ‘which immerses the diner in Guadalajaran paintings with a tall fountain in the center of the room.
There is a bar in the room and she serves lovely nonalcoholic Mexican drinks. Horchata, piña drinks, Barq’s gluten free beer. (Nonalcoholic?)..
The tables themselves are works of art.. testimony to the care and love that I find when I dine here.
