Review of El Tovar Dining Room

The finest restaurant on the South Rim boasts a chef who has done something amazing: he has systematically revised the menu over the last year or two to de-emphasize flour and increase the proportion of dishes inherently GF. Wow. Dishes were delicious and creative. I'm unclear on whether they have dedicated kitchen space, but the dining room and kitchen team were very accommodating when they knew GF allergies were in play. I had a delicious, worry-free dinner there.
