Gluten-free...gluten-free...gluten-free (not celiac)! I was shocked to see only 3 stars when I looked Estacia up. I went there for the first time today and was floored by how much of their menu is gluten-free and their willingness to describe items used and not used in cooking to put me at ease. The options were so numerous that I could easily describe just the few items not gluten-free vs. ever try to list all the items that were available. The very best part, aside from the wonderful option-full salad bar and numerous Prime dishes, was the cheese bread (don't know the actual name) that resembles donut holes and tastes amazing and they offered 2 options for dessert that I could choose from. Thanks John for your assistance and kudos to the attentive staff for such an enjoyable experience.

Call ahead before you come, they will tell you what's gluten free. Only 2 meats aren't gluten free.
The meat was dry and not well flavored, and the salad bar was minimal. The worst thing was that, even though I checked on the gluten free status of everything, I became very sick immediately following the meal. I was on a work trip, so spending the entire next day ill was not something I could afford to do! It sucked, because the food wasn't even worth the sickness.

Everything is gluten free except for their chicken. Didn't ask about the sausage. They have two breads served as sides which are also GF.
