Clearly the willingness to be gluten sensitive is not longer part of the waitstaff culture here. My waiter could not be more dismissive of my concerns and offered zero advice or guidance on avoiding wheat. When I asked if they had gluten free options or substitions... he shrugged and said “no”. When asked if they have gluten free pita, he again said no. When I pressed and asked if he had anything that was gluten free he just acted dismissive and said “there are stuff on the menu that we don’t put wheat it”... without any specific guidance, recommendations, or a moments pause.
Note to waitstaff; it may be annoying and inconvenient to have a gluten sensitive customer but that annoyance is no where near the inconvenience of having celiac disease, a mast cell disorder, or food allergies. So perhaps take a moment to be helpful?

Definitely aware and very accomodating! Loukas our server never forgot that I was GF and even brought me a special GF dessert when others has a Filo based dessert. Amazing food and drink, albeit on the pricey side.
