I’ve been here multiple times in the last month after reviewing experiences at other firehouse subs across Ontario both on here and Ontario Celiacs on Facebook. The staff take all the necessary precautions when you state you have a gluten allergy. The sub was always prepared in a separate area with a dedicated cutting board only taken out for gluten allergy and celiac orders. All ingredients used are from fresh bins to avoid cross contact. The bun itself is made my Schar, and is delicious! My go-to sub is the turkey bacon ranch, in which all the ingredients are gluten free.
Every time I go, I let them know in celiac and they make my sandwich with different tools. They do their best to not cross contaminate.
We looked at the website to see what meat and sauces were GF so that it streamlined the ordering process. They carry Schars GF buns. We said it was for an allergy and they took extra precautions. My husband who is a sensitive celiac did not have a reaction and enjoyed the sub more than he enjoys the ones he gets at Subway.

I ordered a medium turkey bacon club on a gf roll. The roll was very soft and a good size. The sandwich was warm and tasted great. My husband ordered a large Firehouse hero with a gf roll too and since it was a large, they put it on 2 rolls. We were very impressed and pleasantly surprised.
I have been here a half dozen times and not had a reaction. They always change their gloves when making my food.

Sandwich was delicious. Best sub bun I have had. I am not celiac but very sensitive to gluten. No problems with my meal.
The online allergen menu is the best I've seen making it super easy for me to order. The gluten free bun was soft and didn't crumble and fall apart. They changed gloves and used all clean knives and work space. Cross contamination could still happen as it is not a dedicated gf facility, but they took extra precautions.
