They are very careful about cross contamination. The crust is cooked is a foil piepan. I would assume it comes frozen and wrapped in plastic. This is a good thing as a pizza restaurant has flower everywhere and if they were hand kneading gluten free crust it would certainly get cross contamination. They bring you a plastic pizza cutter sealed in plastic. The pie was a good size 14" and tasted fantastic, for gluten free the crust I though it was fine. Will be eating there whenever I need to fulfill my pizza craving!
