Absolutely delicious food, if you are just sensitive I would recommend it! I have celiac disease, and have gotten sick from here twice. Once I ordered just sides and the waiter must have not made it clear enough. She actually told me "oh you have celiac disease? You should probably just never eat out because it's never safe, that must suck" they also gave us expired coffee cream that curdled and one of my sausages tasted sour.
food is damn tasty and we used to eat here before my diagnosis (celiac) but I had the mussels and suffered.

This place is NOT safe for celiacs or anyone else who absolutely has to adhere to a fully gluten-free diet due to a medical condition. I (a celiac) was glutened here, due to the staff's ignorance and reluctance to check upon my first question. I tried to clarify several times:
1) Me: "I have to eat gluten-free. Is it possible to have the hash browns gluten-free AND vegetarian?" Waitress: "Yes."
2) (Food was served) M: "So, this is gluten-free and vegetarian." W: "Yes." M: "What about this here?" (pointing at meat substitute) W: "That's Field Roast." M: "I didn't know Field Roast was gluten-free." W: "Yeah, that's just soy."
3) (A few minutes later) W: "If you are unsure about the Field Roast, I can just get you some grilled veggies." M: "No, I just wanted to make sure."
After I had already taken a bite, almost trusting her, just before I was going to triple-check on my smartphone, the waitress finally told me that the "meat" was not gluten-free. Why in the world would she tell me with such certainty that the food was safe, if she had not even bothered checking the ingredients or checked with the cook? There was also confusion around whether she was going to replace the inedible dish or not, wish she finally did. This could have all been avoided, had she made sure the first time I asked. I could have easily had a gluten-free dish without the bacon instead of being served what is pretty much pieces of 100% gluten (seitan). I did not have to pay for the replacement dish and fruit plate that I received, but that is the least that Fresh Bistro could have done, and it does neither restore the destroyed villi in my intestine, nor does it fix the damage to my immune system. I suggest Fresh Bistro remove the "gf" labeling from its menu, if it does not know what that entails. I won't be eating here again.

So lucky to have found this EXCELLENT restaurant while visiting Seattle for the first time. Great dinner, with many gluten free options! Don't miss an opportunity to treat yourself to a meal here.
