Everything was gluten free, so no bad choices possible. The concept is similar to making a bowl at Chipotle where you choose some sort of base (rice, cauliflower rice, or greens-based), a vegetable, a protein, then a la carte toppings and a dressing. The meal was delicious and the service was good.
They also asked about allergies, so beyond gluten, they seem to know how to advise on other allergies. (Almonds are used in a couple items present during our visit.)
