Heads up - sticky rice used for sushi rolls is not gluten free.
I called to inquire about the additives in the rice used to make the rolls. It took me a bit but they first answered “vinegar”, and then I asked what kind and they said “Japanese vinegar” and then I asked it it was rice vinegar or something else and they said “Ginsho”.
I looked up ginsho and it’s a grain vinegar that’s sometimes malted which means there is barley or rye in it.
Please beware… it took us a bit to figure out why sometimes my celiac daughter could eat sushi and sometimes it made her ill. Only rice vinegar can be used.
