I have been here many times and have only ever once had an issue because she was a new waitress and did not know the procedure on what to do when the customer has celiacs. If you believe that your waiter/waitress is not handling it properly ask how long they have been there and if they know the process for this stuff. The managers and kitchen staff take it very seriously and it’s always the manager who brings your food out so if this doesn’t happen make sure you get your order double checked.
