Asked the cashier if the sundae could be made gluten free and he didn’t provide much guidance. He just kept pointing to what was on the menu. I didn’t end up getting anything to avoid getting sick because they weren’t knowledgeable.

Tried to visit the Ghirardelli shop, but they were out of several of the drinks my companions were interested in, and staff told me that NOTHING in the shop could be safely made gluten free. Do not bother.
