It's a buffet so "safety" rating naturally has to be a bit lower due to variables that the restaurant cannot control like other patrons and the plates of food going around.
That being said my wife who is a celiac that will go into anaphylaxis if she gets contaminated felt safe enough to eat off this buffet she simply avoided anything that looked like contamination could be an issue. Just like most things in Branson everything was clean and taken care of. If you live a GF life you should be just fine navigating this buffet.
They have a printed off sheet of what is Gluten free they also note that the only penuts are at the ice cream station. My wife said the baked chicken was killer I ate my fair share of the fresh cut roast beef and aujus sauce which was all gluten free. I would say easy 70 percent of this buffet was gluten free.
Price was fair for a Branson buffet. My family of 4 was $70.
