There’s no dedicated fryer — many items are listed as gluten free but many are not celiac safe, including anything with fries like steak frites. I let them know about celiac, but maybe I also could have interrogated the waiter more. Celiacs should avoid the ribs — I ordered them since they were listed as gluten free, but it was not explicitly clear from the menu that they go in the fryer, even though it was clear when they came out that they were deep fried. They apologized profusely when it came and offered me the salmon instead, which is pan fried and less likely to be subject to cross contamination.
